Look at the competition. For example, if you need to compete on a store shelf next to other large format cook books then you need to take that into account.

Function
Is the book expected to survive a lot of abuse, like a text book or manual? Does it need to lay flat, like a reference or instructional title. Is it a legacy item meant to last for 100 years? Questions like this will help us determine the physical makeup of the book, it's paper stock, binding method, and size.

Cost
If your title is meant for resale, the printed unit cost is always a factor. Things that influence print costs are page count, paper choice, size and color.

You can tackle it yourself, hire a layout person of your own, or have your talented niece do it, it's up to you! If the final result is a print ready file, then you've saved us time, which will save you money.
